Recipe for my Special Zesty-Turkey Sauce

Recipe Name: Zesty Turkey Sauce

Type or Purpose: special dinner/ Special Lunch

Ingredients:

  • Turkey wings cut into big to desired sizes
  • Chicken stock
  • Coconut oil
  • Green pepper
  • green peas
  • Chicken
  • carrot – cut into small chunks
  • Cabbage – chopped roughly
  • Onion – sliced
  • Ginger (1 big) – blended
  • Garlic (10 cloves) – minced
  • Stock cubes (I use Knorr Chicken)
  • Salt and choice Seasonings
  • Blended tomatoes and Scotch bonnet pepper (5medium sizes each)

Cooking Procedure:

  1. Season and cook the turkey till it is soft
  2. Put the Chicken stock and coconut oil in a saucepan and let it boil.
  3. Then add onions
  4. Allow it to simmer for 1 min
  5. Add tomatoes and peppers
  6. Add salt and seasonings to taste.
  7. Allow it to simmer for 5minutes
  8. Add the diced carrots and peas and other vegetables let it simmer for 2 minutes
  9. Finally, add the cabbage
  10. Allow it to simmer for till you are satisfied with the consistency and taste.
  11. Serve with white rice.

Jamaican Jerk Sauce

JAMAICAN JERK SAUCE 

Ingredients:

  1. *Thyme – 1tbsp (ground)
  2. *All spice berries (Pimento) – ½ cup (ground)
  3. *Scotch bonnet peppers – 4-6pieces
  4. Garlic – 6-8 cloves (grated)
  5. Brown sugar – ½ cup
  6. *Cinnamon powder – 1tsp
  7. *Nutmeg – ½ tsp (grated)
  8. *Black pepper (ground) – 1tsp
  9. Kosher salt (to taste)
  10. Onions – 2 medium size
  11. Oil for preserving the sauce (optional)
  12. Ginger – 1 medium size (optional)
  13. Soy sauce – 2tbsp
  14. *Juice of 2 limes

Instructions

  • Puree all the above listed ingredients in a food processor or blender until smooth.
  • Rub the sauce on chicken, pork, fish, or red meat and marinate the protein overnight before grilling or frying.
  • Pour oil over leftover sauce and keep in fridge for weeks. (mine have stayed more than 3 months)
